In this pack you will find moulds for corzetti, a traditional type of pasta typical of Liguria and Tuscany.
Use:
After creating the dough, flour the two moulds well and press a portion of the dough into them.
Gently lift the upper mould, remove the dough and cut with a knife or, better still, a pasta cutter.
The moulded Corzetti (‘cruxetti’)
appeared in the Middle Ages, during the Renaissance period.
Noble families of the time apparently ordered their cooks to make a type of pasta bearing their coat of arms, all in order to remind diners of the importance of their family and to reaffirm their dominance over the territory.
The engravings were usually different on the two sides. The name comes from the stylised image of a small cross (‘cruxetta’) with which one side of these medallions was originally decorated, hence the name ‘cruxettu’.
In eastern Liguria, the word ‘corzetto’ means both the wooden mould and the paste thus engraved.

Two to three types of articles, simple. The focus was on large quantities.
Today, on the contrary, quality and customisation are the keys to success in the market.
After Grandpa Bruno, Danilo and Arrigo joined the company, bringing the first innovations. We are in the 1980s, and from brushes they moved on to small wooden objects, souvenirs, gift items.
Like the trees, they have strong, historical roots: their workshop, in the heart of the Trentino mountains, has always tried to convey their passion and respect for nature with beautiful, sustainable and sought-after wooden objects. Their wood products respect nature.
They use PEFC-certified wood from sustainably managed forests.
Currently 100% of the electricity used in the workshop comes from renewable energy sources.
