Sabrage is a special technique for opening champagne bottles with a sabre (sabre in French), usually used as a ceremonial gesture. The sabre is slid along the body of the bottle towards the neck with a sharp blow. The force of the blade striking the lip of the neck is sufficient to break the glass and separate the neck cleanly from the bottle collar which, together with the cork, is shot away by the force of the gas contained in the wine. When applied correctly, the technique is effective with any sparkling wine.
This practice became popular in Napoleonic France when the army visited the aristocratic domains belonging to the empire. The period was just after the French Revolution and the sabre was the weapon of choice for the army's light cavalry, the hussars. Given the numerous victories achieved by the army, there were many celebrations, during which it was customary to open the bottles by a convenient and easily available means. It seems that during one of these celebrations Napoleon himself said 'Champagne! In victory it is a merit; in defeat a necessity', thus encouraging its use and practice.

Nel piccolo villaggio di montagna di Aveyron (sud-ovest della Francia), nasce nel 1829 un modesto coltello da contadino.
La sua famosa 'ape', simbolo di prestigio e di qualità, che orna la molla, ne farà il coltello più celebre di Francia. L'antenato del Laguiole è nato dall'adozione della Navaja, dalla forma arabo-ispanico, portata a inizio del XIX secolo da coloro che partivano a lavorare in Spagna.
Nel 1880: apparve il cavatappi, richiesto dagli abitanti di Aveyron del nord, 'emigrati' a Parigi per lavorare nei bar (garcon de café). Il Rosario dei pastori che figura sul manico è la miniaturizzazione e simbolo della santa croce.
Il Laguiole veniva piantato nel pane, fungendo da "Croce" e così utilizzato per la preghiera di quelli che partivano per lunghi mesi a causa della transumanza, e lontani dai luoghi di culto. This large, perfectly balanced Laguiole hunting knife was made entirely by hand in Laguiole, by a master blacksmith, according to the strict LOG (Laguiole Origine Garantie) quality criteria. Depending on the version, it requires from 109 to 216 working steps.
The blade has a very balanced geometry proven over many decades: it is 11 cm long, 3 cm high and 4 mm thick. Both the bee and the area above the ricasso can be used as a thumb rest.
The blade is ground on both sides to about 22 degrees to the cutting edge (flat grind), so that optimal breaking and scoring is guaranteed and, at the same time, the edge does not round off too quickly.
The handle scales are polished to a high shine with seven different oils and high quality wax pastes on large felt discs.
The left handle bears the traditional shepherd's cross (French: croix du berger) as decoration.

Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.
The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".
The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.
The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

This superb Cheese Knife Le Buron from our cheese knife range was designed by the famous French designer: Benjamin Auzier for the manufacture Laguiole en Aubrac. Named by the same name as the stone buildings, with roofs covered with slate or slate which served as a place of manufacture and refining cheeses produced on site. With its frank and ergonomic shape, it exist in 3 materials. The blades are forged in one piece.
