These high quality knives, are handcrafted in the tradition of French Thiers cutlery.
This large, perfectly balanced Laguiole hunting knife was made entirely by hand in Laguiole, by a master blacksmith, according to the strict LOG (Laguiole Origine Garantie) quality criteria. Depending on the version, it requires from 109 to 216 working steps.
The blade has a very balanced geometry proven over many decades: it is 11 cm long, 3 cm high and 4 mm thick. Both the bee and the area above the ricasso can be used as a thumb rest.
The blade is ground on both sides to about 22 degrees to the cutting edge (flat grind), so that optimal breaking and scoring is guaranteed and, at the same time, the edge does not round off too quickly.
The handle scales are polished to a high shine with seven different oils and high quality wax pastes on large felt discs.
The left handle bears the traditional shepherd's cross (French: croix du berger) as decoration.

Laguiole, which can be defined as the "capital" of the Aubrac, is a small town of about 900 inhabitants that became known all over the world for the traditional Laguiole knife.
The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".
The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.
The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

The handle is decorated with classic "dice eyes" that are meant to turn the knife in a valuable amulet against the evil eye. After marriage these knives were usually hung on the wall above the bed.

The Laguiole knife, also known as a knife-corkscrew, loved by the best sommeliers in the world, is said to have evolved from the one used daily by the people of the region since the fourteenth century. It is said that they received it from their parents on the occasion of the First Communion, and used it with love for life as a friend, and as an "amulet".
The Laguiole knife refers to an older model called capuchadou, which the Aubrac breeders used every day since the fourteenth century. The farmers brought it with them, hung on their belts and used it to work wood, or to cut bread and cheese. It is said that, at the end of the working day, they put it on the ground, like a cross, to offer their evening prayer.
The current Laguiole knife, has its prototype in the one designed by Pierre-Jean Calmels, at the beginning of the nineteenth century. At the time, many Catalans lived in this region, used for deforestation or other jobs. They used a clasp knife, a curved blade called a navaja, and Calmels created a beautiful and functional instrument, fusing the traditional navaja and Laguiole knife, heir to the capuchadou. Still today, keeping the tradition, each Laguiole En Aubrac knife is handcrafted by Laguiole's artisans.

Uno tra i sedici coltelli e specifici strumenti realizzati artigianalmente dietro collaborazione dello Chef Patissier Ernst Knam necessari per l'efficace lavorazione di cioccolato, frutta, pan di spagna, creme e mousse, per il corretto taglio di torte, crostate e dei dolci di morbida consistenza e per l'adeguato servizio di tutto quanto sopra menzionato e della Petit Patisserie.
Descrizione dell'articolo a cura dello Chef Knam: Un taglio netto su tutte le paste piene. Ecco in sintesi la funzione di questo coltello, studiato specificamente per tale risultato. Inanzitutto, bagnate la lama con acqua calda, dato che questo tipo di dolci ha quasi sempre la glassa, che tende ad appiccicarsi alla lama. Cio' renderebbe impossibile una perfetta esecuzione del taglio immediatamente successivo sporcando la fetta o addirittura portandola a rimanere attaccata al coltello. La punta inclinata della lama è concepita per entrare per prima nella pasta; inseritela quindi al centro del dolce e a questo primo movimento fate seguire uno schiacciamento verso il basso, con un movimento ad arco di forza moderata. La fetta risulterà ineccepibile. Dolci che possono essere tagliati con questo coltello: Torta Sacher, Torta di Carote, Tutte le torte a pasta Piena.
